01 - 2 tablespoons olive oil
02 - 1 medium onion, diced

04 - 1 pound ground beef or Italian sausage
05 - 2 tablespoons tomato paste

07 - 4 cups chicken or vegetable broth

→ Cheesy Garlic Toast
18 - 1 small baguette or 4 slices Italian bread
19 - 1/4 cup unsalted butter, softened
20 - 2 cloves garlic, minced
21 - 1 cup shredded mozzarella cheese
22 - 2 tablespoons chopped fresh parsley
# Directions:
01 - Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3 minutes. Stir in minced garlic and cook for 1 minute.
02 - Add ground beef or sausage and cook, breaking up meat, until fully browned and cooked through, about 5–7 minutes. Drain excess fat as needed.
03 - Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, broth, oregano, basil, and optional red pepper flakes. Season with salt and black pepper.
04 - Bring mixture to a simmer. Add broken lasagne noodles. Simmer uncovered, stirring occasionally, until noodles are tender, about 12–15 minutes.
05 - Preheat oven to 400°F. In a bowl, mix softened butter with minced garlic. Spread mixture onto bread slices. Sprinkle with shredded mozzarella and chopped parsley. Arrange on a baking tray.
06 - Bake bread in oven for 8–10 minutes, or until cheese is melted and golden.
07 - Once noodles are tender, stir half of the mozzarella and Parmesan into the soup. Taste and adjust seasoning as needed.
08 - Ladle soup into bowls. Top each with a dollop of ricotta and sprinkle with remaining mozzarella and Parmesan. Garnish with fresh basil.
09 - Present soup hot alongside the cheesy garlic toast for dipping.
